How I Like My Coffee.

A delicious and creamy coffee that packs a powerful nutritional punch!
  • 1 cup of coffee, or chai tea
  • 1 tablespoon coconut oil (or more, I usually put in 2-3 tablespoons)
  • 1 teaspoon unsalted butter
  • ¼ tsp vanilla
  • a few drops of stevia extract (optional)
  1. Put all ingredients in a blender or food processor. Mix on high speed for 20 seconds until frothy. Drink immediately and enjoy all the energy!


Coffee With Coconut Oil

The idea of coconut oil in coffee might sound strange at best – and unappealing at worst. But believe it or not, it whips up to a beautiful, frothy, satisfying hot drink – with some surprising health benefits.

The health benefits of coconut oil

With its antiviral, antibacterial and antifungal properties, coconut oil has been gaining a reputation as a superfood. Coconut oil might help to:

What you need to make coconut coffee

•a fresh cup of coffee (or tea if you’re not a coffee-drinker)
•one to two tablespoons of coconut oil (start with one and work your way up until you’ve found the amount that works best for you)
•two to three tablespoons of coconut milk

optional add-ins
•a few squares of 80% dark chocolate
•spices: cinnamon, nutmeg, ginger

How to make your coconut coffee

Brew a cup of coffee using your favourite method – I usually use my french press. Add the coconut oil and coconut milk and let it melt in the hot coffee.

I also often add a shake of cinnamon for flavour. Sometimes I also add a tablespoon of ghee or a few squares of dark chocolate for extra richness. Some days I forgo the coffee altogether and make coconut chai tea, which is just as delicious.

Now, if you stop here, with coconut oil floating in your hot drink, then you’ll have a hard time gagging it down. The oil will pool at the top of your coffee, leaving you with a slimy, viscous and decidedly unappealing drink.

The trick is to mix it well, using a blender. After a few minutes, you’ll have a beautifully-lightened, creamy, cappuccino-like cup of heaven.

  4. You can make coconut milk  or shredded  coconut can be added to yogurt or cereal.
  5. Celiac sufferers can make your own tasty cakes, muffins. pastries  and breads using coconut flour. Coconut flour gives amazing results, and it’s  healthy.
  6. High quality coconut  oil is excellent as a skin moisturizer or lotion. It can actually help heal  psoriasis, dermatitis, or eczema. It can also serve as a base for facial  treatments or as a hair conditioner. Coconut oil is loaded with  antioxidants to help keep your skin from aging too rapidly.
  7. Blend together 2 tablespoonful of virgin coconut oil, a juice of half a lemon, a clove of garlic. a piece of ginger and some apple juice to make a detox preparation that be taken on a daily basis. In addition to being a liver detox, it will keep you healthy, more energetic and help you lose weight at the same time.

Coconut Oil: Cure for Diabetes?

A new study by The Garvan Institute of Medical Research (which now one of Australia’s largest medical research institutions with nearly 500 scientists, students and support staff) with animals demonstrates that a diet rich in coconut oil protects against ‘insulin resistance’ (an impaired ability of cells to respond to insulin) in muscle and fat. The diet also avoids the accumulation of body fat caused by other high fat diets of similar calorie content. Together these findings are important because obesity and insulin resistance are major factors leading to the development of Type 2 diabetes.

The study is also interesting because it helps explain human studies showing that people who incorporate medium chain ‘fatty acids’, such as those found in coconut oil, into their diets can lose body fat. The medium chain fatty acids, like those found in coconut oil, are interesting because they behave very differently to the fats normally found in our diets. Unlike the long chain fatty acids contained in animal fats, medium chain fatty acids are small enough to enter mitochondria – the cells’ energy burning powerhouses – directly, where they can then be converted to energy.

When people eat a high fat diet, their bodies attempt to compensate by increasing their capacity to oxidise fat. The medium chain fatty acid (coconut oil) diet was more effective at increasing the oxidative capacity of muscle than the long chain fatty acid (lard) diet leading to less fat storage in muscle and better insulin action.

If someone is trying to prevent weight gain, we can see they may benefit from substituting oils containing medium chain fatty acids for other oils in their diet, as long as consideration is given to the potential problem of excess fat in the liver.

Unfortunately the downside to eating medium chain fatty acids is that they can lead to fat build up in the liver, an important fact to be taken into consideration by anyone considering using them as a weight loss therapy. Using coconut as a substitute for other oils and using it in moderation is a good idea. Remember that many communities had used coconut oil for daily use for many centuries without any problems. (Islanders have consumed large amounts of coconut oil for many generations without ever encountering diabetes, but when they abandoned it for other foods and oils, the results were disastrous).

Coconut Recipes: Banana and Coconut Bread


  • 400 g ripe banana
  • 6 free range / organic eggs
  • 4 fresh pitted dates
  • 2 teaspoons vanilla extract
  • 60 ml (1/4 cup)  macadamia nut oil, coconut oil or cold pressed olive oil
  • 1/2 teaspoon ground cinnamon
  • 2 teaspoons baking powder
  • 70 g (1/2  cup) coconut flour
  • 20 g (1/4 cup) chia seed


  1. Preheat your oven to 150 C. (fan forced) 170 C ( no fan)
  2. Combine banana, dates, oil, cinnamon, vanilla, eggs and baking powder into a blender or food processor and blend until creamy and combined  – alternatively you can do this by hand in a large bowl.
  3. Add the coconut flour and chia seeds and mix through.
  4. Rest for 10 minutes to allow the chia and coconut flour to expand.
  5. Lightly oil one loaf tin and then line with baking paper –  The size I used was: 10 1/2 cm wide and 26 cm long.
  6. Spoon batter into the tin – at this stage you can decorate the bread with flaked coconut of sliced banana before baking.
  7. Bake for  50 – 55  minutes ( a skewer inserted into the centre should come out dry).
  8. Cover the top with foil if over-browning.
  9. Remove from the oven and allow to cool before turning out the loaf.
  10. Makes 1 loaf serves 12. keeps in the fridge covered for up to 1 week. (freezes well too)
